Spicy Black Bean Burgers

Dealing with worker's comp makes me want to pull my hair out. Seriously, if I didn't already have debilitating headaches from the injury, I would be getting them from this whole ordeal.

Also my husband and I were accepted to Birthright. I'm very excited! I'm hoping that my headaches will be gone by January so that I can go on the trip.

Sorry!!

Five weeks until we get to meet our next Guiding Eyes puppy. I'm so excited!

I have been taking pictures and notes for new blog posts, but I haven't been able to upload the pictures. For reasons that have yet to be determined, the power keeps getting tripped. I'm afraid of causing damage. My laptop rests in a backpack in the bedroom.

Chicken and Red Bean Enchiladas

It's been a bit of a crazy week! We're maybe 75% done with packing. I was very sad to start packing up my kitchen stuff. Goodbye, blender. Goodbye, casserole dish. Goodbye, glasses and plates. Goodbye, cutting boards.

I've been spending a lot of time crocheting and watching 30 Rock.


Clearly I am not yet a master

SO this is a lazy day. I'm trying to use up as much of what is in our pantry/freezer/fridge as possible. This means using more canned foods than would normally use.

Where I've been

I've been MIA lately. I know. Sorry! I've been sick and a whole lot is happening in my life right now.

Getting ready to move and in the middle of the application process for Birthright. Hopefully we'll both be accepted and will be able to go before the deployment.

Black Bean Sweet Potato Enchiladas

This morning before work I decided to start some black beans in the slow cooker. I didn't know what I was going to make, I just started them knowing I need to clean out my pantry before we move (I have a large stockpile of rice and dried beans...by stockpile, I mean borderline hoarding :x). I forgot to make the rice in the end, but I'm ok with that!

Quick Summer Salad

It's hot today. It was hot yesterday. It's going to be hot tomorrow and I don't think it's going to stop for some time.

Egg Drop Soup

My name is Rebecca. I currently live in upstate New York with my husband and two cats. I've been asked about making a blog in the past, and today I decided to take the plunge!

I plan on updating at least once a week, if not more. I have a LOT of spare time on my hands right now, so look forward to some changes. :) I'm not the best with words, so this is going to be a work in progress on a lot of levels.
