Shrimp Scampi

SHRIMP SCAMPI
2-3 tablespoons unsalted butter
1/4 cup diced onion
1 cup chopped mini peppers
3 cloves garlic (diced)
1 lb shrimp, precooked
1/2 cup chicken broth
 1/2 lb whole wheat linguine
2 bay leaves
Salt & pepper

First, put water on to boil. When it is boiling, add the linguine and bay leaves.

Add half of the butter to your skillet and then add your diced veggies. Sauté on a low heat until the onions are translucent.

While your veggies are sautéing, rinse your shrimp thoroughly in a colander. If you have a problem with sulphites, this will help you.

Add the shrimp and remaining butter. Turn the heat up to medium. The butter may froth a bit if the temperature is too high. When the frothing subsides, add the broth and lightly salt.

Serve over linguine with freshly cracked pepper!



We don't have very much leftover from last night! It was delicious!
