Peach Chicken

You know what sounds like a terrible combination? Peaches and chicken. Right off the bat, it sounds like something that would be really weird to taste.



At least, that's what my friends said when I brought it for lunch. They don't say that anymore!

PEACH CHICKEN
2 chicken breasts
1/4 cup brown sugar (55g)
1 peach
Ginger
Ground cloves

Preheat the oven to 350*F(175*C)

Grease your pan. Place the chicken in the pan.

Sprinkle half of the brown sugar over the top. Add the peaches. Sprinkle on the rest of the brown sugar.

Get a pinch of ground ginger and ground cloves and sprinkle on top.

Bake for ~25 minutes or until internal temperature reaches 165*F(74*C)



You can substitute canned peaches if fresh ones are hard to come by, but I think that fresh peaches are the best. Serve immediately after it comes out of the oven, because when it is reheated it's very unattractive looking. The chicken absorbs the sauce and turns a darker color (one we usually associate with spoiled meat).

The juices that come out of this dish are amazing. I recommend serving with brown rice and a soup! :)
