Roasted Cauliflower

1 head of cauliflower
Lemon Juice (frozen, from Wegman's)
Tri-blend or Parmesan cheese
Olive oil
Salt, pepper

Preheat oven to 400*F/200*C.

Chop up your cauliflower into delicious chunks.

Put in a bowl and mix with olive oil until it is evenly covered. Salt and pepper it.

Put on a baking sheet.

Drizzle with lemon juice.

Sprinkle cheese over top.

Set your timer for 20 minutes. Check to see if it's cooking evenly (it can be difficult to cut into even pieces, and it's important not to let the smallest pieces burn!). Check every 5 minutes until the tops are crispy brown. This picture doesn't really do it justice.
