I have been struggling with my husband being deployed. There is no doubt about that. I don't attempt to hide it. Right now I'm supposed to be in DC at a Yellow Ribbon event, but about twelve things went wrong with the whole process.
I have been working with a six year old this summer on developing healthy eating habits. We start every morning with 10-40 minutes of yoga and stretching, then we made breakfast (either a smoothie, yogurt, or pancakes). After we do "boring work stuff"/tutoring we start to get ready for lunch. I got a dollar plate from Five Below and drew the MyPlate on top of it. It's an updated version of the food pyramid many of us grew up with.

Spicy Black Bean Burgers
Dealing with worker's comp makes me want to pull my hair out. Seriously, if I didn't already have debilitating headaches from the injury, I would be getting them from this whole ordeal.
Also my husband and I were accepted to Birthright. I'm very excited! I'm hoping that my headaches will be gone by January so that I can go on the trip.
Anywho....

Butternut Squash Pasta
I'm crossing my fingers hoping that this won't trip the breaker.
This delightful dish was born of me forgetting that I left the squash in the slow cooker.

Oatmeal with berries
I've been on an oatmeal kick lately. Since my dishwasher (the Boy) is out of state with the army, I've been trying to use as little dishes as possible.

Peach Chicken
You know what sounds like a terrible combination? Peaches and chicken. Right off the bat, it sounds like something that would be really weird to taste.
At least, that's what my friends said when I brought it for lunch. They don't say that anymore!

Grilled Cheese with Pesto and Tomato
Look at this buttery, crispy, delicious sandwich.
Such an easy way to make a simple meal feel fancy. This is why my husband always asks me to make his lunches - he says his are too boring.

Kale Almond Pesto
I'm cooking for 1 for the next few weeks thanks to the army. I have vowed that I will not fall to eating fast food and frozen junk...for the most part. I'm going to say some junk food is still allowed.
First up: Make some pesto!

Chickpea Hummus
I got around to making another batch of chickpeas. These weren't sprouted though. I made them in the slow cooker. Usually I boil water and quick hydrate, but I didn't feel like that today. This was my first go at making beans without doing that beforehand!

Black Bean Sweet Potato Enchiladas
This morning before work I decided to start some black beans in the slow cooker. I didn't know what I was going to make, I just started them knowing I need to clean out my pantry before we move (I have a large stockpile of rice and dried beans...by stockpile, I mean borderline hoarding :x). I forgot to make the rice in the end, but I'm ok with that!

Breakfast Burrito
I love my new cast iron skillet. I'm still working out the kinks and watching a lot of youtube videos on how to maintain in. That being said, I'm using it for almost everything and it's (mostly) turning out really well.

Salt Potatoes
This week I learned that salt potatoes are a regional thing. I had no idea! They're from CNY because of all the salt mines in the area.
It kind of explains why I didn't know what they were before I moved here, but that's beside the point.

Marinade
Marinades!
What makes a good marinade is very similar to what makes a good salsa. It's all in the ratios.

Quick Summer Salad
It's hot today. It was hot yesterday. It's going to be hot tomorrow and I don't think it's going to stop for some time.
I don't want to turn my oven on. The pilot lights are keeping the main room hot enough as it is.
What can I make for lunch that's quick, doesn't require a trip to the store, and won't require any heat whatsoever?
Answer: A refreshing summer salad!

Rolls
I love these rolls. They're SO good fresh out of the oven, and when they cool down, they're pretty much English muffins. They're great toasted with preserves or peanut butter.
