Roasted Garlic Chicken

Roasted Garlic Chicken
Chicken leg quarters
Garlic, 6 cloves
Sweet potatoes
Olive oil
Spices: Cumin, chili powder, fresh cracked pepper, kosher salt, organic dried minced onion (organic only matters if you have an issue with sulphites)

Preheat the oven to 425*F/218*C

Minced the garlic. Place in a small bowl. Add 1 tablespoon cumin, 2 tsp chili powder, 1/2 tsp of dried minced onion, and pepper to taste. Add 2 tablespoons of olive oil. Mash it all together with a fork.

Rinse off the chicken and pat it dry (remove the skin at this point if you're not a fan). Place in an ungreased pan. Spread the garlic mush evenly on top. Sprinkle lightly with kosher salt.

Slice the sweet potatoes and toss around the chicken.

Bake for ~45 minutes or until internal temperature reaches 165*F/74*C.


The potatoes are SO GOOD. I love the flavors that the chicken fat imparts. I served this with some brown rice and red beans. Mmmm. I have also perfected my red bean recipe. They come out perfectly every time now!




Guys, we're getting our puppy Dublin tomorrow. I can't even express how excited I am about this!


Tomorrow a friend and I are going to drive up to the Canine Development Center and pick up the little guy and another little pup who is also going to be raised in this region.
