Breakfast Burrito

I love my new cast iron skillet. I'm still working out the kinks and watching a lot of youtube videos on how to maintain in. That being said, I'm using it for almost everything and it's (mostly) turning out really well.

BREAKFAST BURRITO
3 eggs
1/2 smoked turkey and cheddar sausage, diced
unsalted butter
1 tablespoon three cheese blend
1 tablespoon diced scallions
1/4 cup diced tomatoes
1/4 cup diced red pepper
freshly ground pepper
kosher salt
2 tortillas
**Cast iron skillet

Preheat the pan until you can put a drop of water on it and it hops around (if it immediately vaporizes, it's too hot).

While the pan is heating up, mix eggs in a bowl with a fork.

Add butter to pan. Make sure it is evenly coated.

Add pepper, tomatoes, and sausage to the pan. Keep it moving. If at any point it starts to stick, add more butter and turn the heat down a touch.

When the veggies and sausage are done, add in the scallions and eggs. Scramble.

When the eggs are ALMOST done, add the cheese, salt, and pepper.

Serve on tortillas.

I like to overstuff my tortillas and The Boy likes to keep them small so he can eat two. However you want to do it is up to you! :) I had trouble with the egg not completely coming off of the skillet after I was done. I ended up having to scrub, then reseason the pan. That's what happens when the temperature is too high. It's the first time I've had an issue like that since I got it.

Next up, I think I'll post my "famous" peach chicken recipe and some side dishes.
