Lately

I have been struggling with my husband being deployed. There is no doubt about that. I don't attempt to hide it. Right now I'm supposed to be in DC at a Yellow Ribbon event, but about twelve things went wrong with the whole process.

I have been working with a six year old this summer on developing healthy eating habits. We start every morning with 10-40 minutes of yoga and stretching, then we made breakfast (either a smoothie, yogurt, or pancakes). After we do "boring work stuff"/tutoring we start to get ready for lunch. I got a dollar plate from Five Below and drew the MyPlate on top of it. It's an updated version of the food pyramid many of us grew up with.

Spicy Black Bean Burgers

Dealing with worker's comp makes me want to pull my hair out. Seriously, if I didn't already have debilitating headaches from the injury, I would be getting them from this whole ordeal.

Also my husband and I were accepted to Birthright. I'm very excited! I'm hoping that my headaches will be gone by January so that I can go on the trip.

Chickpea Hummus

I got around to making another batch of chickpeas. These weren't sprouted though. I made them in the slow cooker. Usually I boil water and quick hydrate, but I didn't feel like that today. This was my first go at making beans without doing that beforehand!

Quick Summer Salad

It's hot today. It was hot yesterday. It's going to be hot tomorrow and I don't think it's going to stop for some time.

I don't want to turn my oven on. The pilot lights are keeping the main room hot enough as it is.

What can I make for lunch that's quick, doesn't require a trip to the store, and won't require any heat whatsoever?

Egg Drop Soup

I've been trying my hand lately at making different Asian dishes. I came upon a recipe for Egg Drop Soup that is so quick and easy, it was hard to pass up. It's a lot less intimidating than it seems. I can't believe I never tried making this before! It was a big hit.
